If you are swimming in fresh zucchini from your garden or just love zucchini and are looking for a different way to cook the delicious vegetable, have I got a delicious, easy and healthy recipe for you. I saw the original recipe for Zucchini Parmesan crisps on the internet and decided to improvise a bit and made a similar recipe but in the shape of fries.
When I cook, I tend to add a little bit of this and a little bit of that. This time, I tried to measure out the ingredients so I can share the recipe with everyone else to enjoy.
Recipe for Zucchini Parmesan Fries
2 medium zucchini or 1 Large zucchini
1 cup freshly grated Parmesan (3/4-ounce)
1 cup plain dry bread crumbs
Salt to taste
Ground black pepper to taste
1 cup of 1% of milk
Preheat the oven to 450 degrees F. Coat a baking sheet with cooking spray.
Slice the zucchini length wise in half and then in half again and then in half again. I usually do this until the zucchini looks like the shape of a french fry.
I use a plastic bag and add an equal part of Parmesan cheese and bread crumbs, I then add a bit of salt, and a drop of pepper.
Put the milk in a bowl.
Dip each piece of zucchini into the milk and then throw it into the plastic bag. I usually wait until I have a few pieces of zucchini in the bag and then I zip the bag and shake it so that the zucchini is completely covered with the Parmesan mixture, coating it evenly on both sides. I press the coating on so that it sticks to the zucchini and then place each piece in a single layer onto the baking sheet.
Bake the zucchini until it is brown and crisp, approximately, 25 to 30 minutes. Let it cool a bit and remove it with a fork or spatula. Serve immediately.
