Healthy One Pot Zucchini and Ground Turkey Casserole
With my garden in full bloom and the zucchini starting to sprout up, we have an abundance of fresh vegetables. Last year, I found a zucchini parmesan chip recipe that my family fell in love with and this year, I tried a new one pan recipe using the home grown zucchini that is both quick and easy, making for a great go to meal during the week. I found the original recipe on Food.com and modified it by using turkey ground beef.
Ingredients for One Pot Zucchini Casserole:
2 medium zucchini, cut in 1/4-inch chunks
20 oz turkey ground beef
2 garlic cloves, chopped
1 cup jarred salsa
1 teaspoon ground cumin
Salt and pepper to taste
Directions for One Pot Zucchini Casserole:
Brown turkey ground beef
Once the turkey ground beef is browned at least half way through – add the chopped garlic, salt and pepper
Cook over medium heat for about 10 minutes or until meat is cooked through.
Add jarred salsa
Cover and simmer the meat, salsa and spices on a low heat for approximately 10 minutes until all of the flavors blend.
Add the zucchini chunks. Cover and cook for about 10 more minutes until zucchini is cooked, but not too soft.
You can add more salsa – depending on how moist you like your food. I also add more cumin since my family loves spicy foods.
The above ingredient amounts are guidelines – meaning they are meant to be adjusted to suit your family.
I serve this recipe with rice, although my husband eats it with nacho chips.
